The main one is 'Le Palais de l'Île' (12th century island prision). Also the old colorful houses at the foot of the water channels and at the top of the town its castle.

For night photography use a tripod.
During the day, a neutral filter to soften the water and also a tripod are interesting, as long as the agglomeration of people allows it.
It is a very touristic area and there are a lot of people taking pictures and walking around, so to take pictures without people you need to take them at night or early in the morning.

Keep in mind that on Sunday mornings there is the weekly market and the bridges and streets of the old town are filled with vendors' stalls and can make the location worse (as it was in my case).
