Of course you can find more interesting photography objects than windmills in that country. There is Amsterdam as the capital with its lovely small town channels and of course the famous red light district which offers great opportunities for street photography. Additionally you can get to the north sea to capture some seascape stuff.
The Netherlands is one of the smaller european countries, so it is probably not the worst idea to get yourself a car and drive through the entire country.
